The flavour of our caviar is rich and creamy, with a mild nuttiness and afternotes of oyster. We like to age our caviar for 2 weeks minimum and is generally best at 4-12 weeks, however this can vary to individuals tastes. Being a natural farm, our fish mature at a slower rate to others, so the roe has more of a chance to develop. This is apparent in size, colour and flavour. Our caviar can be black but the majority is dark to light brown. The size of the roe is ~2.7-2.9mm. The more mature roe has a deeper, richer flavour with a creamier texture and wonderful mouth feel., all desirable traits for great caviar.
Exmoor Caviar pairs very well with seafood, especially scallops, crab and lobster. The depth of flavour offers versatility and the rich texture offers great contrast to crisp or clean flavours. Alternatively, it is superb as an eating caviar on it’s own or with potatoes, blinis, cucumber or toast points. Exmoor Caviar is the first farm in the UK producing caviar, set up in 2011.
